Affiorato, which literally means "what has risen to the surface," takes its name from a very ancient manufacturing process used in Italy. The oil, being lighter than water, "floated" to the surface, and the nectar obtained was notably fresh, vegetal, and delicate.

To be available in stores by the end of November, the countdown begins in Sicily in mid-October. To produce this early harvest olive oil for Oliviers&Co, Massimiliano Geraci, the brand’s long-time partner, has implemented an exceptional selection method. The finest olive groves are meticulously chosen, and only the healthiest and greenest Nocellara del Belice olives are hand-picked and immediately pressed after the harvest. Here, the selection is made before pressing to ensure the best of the best olive oil!

Harvested and pressed in record time, Affiorato is quickly transported to France to be bottled in Provence, ensuring it reaches festive tables as soon as possible.
