According to the tradition handed down for 4 generations, to get the best from the fruit, harvesting begins early in the season, when the olives are slightly purple in full aromatic maturity.
The mill located in the centre of the olive grove allows the olives to be crushed and pressed immediately in order to obtain an exceptional oil.
