The Producer and the A Capela estate: Rosaria Pinho, who has been the mill owner for more than 20 years, knows all the peculiarities of her land. Today she passes on her passion for the profession to her son Cyril. At the beginning of November, the olives are harvested at perfect aromatic maturity, the Verdeal, Madural and Cobrançosa olives are then pressed the same day to guarantee optimum quality. A very artisanal production, all the olives of the estate are cultivated in sustainable agriculture.
