Antonio Perales' orchards are located at different altitudes and in different terroirs, allowing him to produce nuanced and flavourful oils.  To create this single variety oil, Antonio has chosen to combine very green fruit for its olfactory power and more mature fruit to develop a unique palette of flavours in the mouth.


The secret of this partner to reach such a level of quality: the olives are pressed at the mill less than 2 hours after the harvest!
