In the Zilianti family, the olive tree and the vine are women's business. Today, Deanna and her daughter Chiara maintain three of the great Tuscan traditions:
Il Fornacino's secret: An early harvest and meticulous care of the olive trees throughout the season to produce a very vegetal Grand Cru olive oil with powerful notes of fresh grass, very characteristic of the finest olive oils in Tuscany.
The olive grove, composed mainly of Correggiolo and Frantoio varieties, as well as some Moraiolo and Leccino, stretches along the picturesque terraces around the historic Certosa di Pontignano, an ancient monastic monastery.
The vineyard and olive grove are located here, between the limestone fragments of the Chianti Classico territories. In reputation and in fact, these territories produce some of the greatest gustatory delights the world has ever known, including Il Fornacino olive oil!
At Oliviers & Co we have been working for years with the Zilianti family whose consistency in the excellent mastery of their craft has earned them the Gold Medal at the NY International Olive Oil Competition every year since 2016.
