A refreshing and original gazpacho of peas, beans and cucumber
250 grams of fresh or frozen peas...
100 gr fresh or frozen beans
1 clove of garlic
Spanish extra virgin olive oil
1 jar of pepper and black olive delight
1 packet of ciappe
Peel and cut the garlic into small pieces.
Heat 2 tablespoons of olive oil in a saucepan.
Add the garlic, peas, beans and ½ cucumber cut into pieces.
Fry over low heat to coat all the ingredients with the oil. Season with salt and pepper and cover with water.
Simmer for 15 minutes.
Blend with a blender and store in the fridge.
Serve iced with a drizzle of olive oil and accompany with some ciappe spread with delicious peppers and black olives.
