Pistachio pistachio & lemon soft cakes

A simple and delicious recipe. The financiers are crispy on the outside and very soft on the inside
All ingredients
  • 2 tbsp of Oliviers&Co Supreme sweet pistachio spread
  • 2 tbsp of Oliviers&Co Lemon curd
  • 6 tbsp. of butter
  • 1.5 tbsp. for the moulds
  • 3 egg whites
  • ½ cup of almond powder
  • 5 tbsp. of icing sugar
  • 3 tbsp. of flour
  • ½ cup of almond flakes

•Heat the butter in a saucepan until it turns a hazelnut color, let cool.

•Mix together the sugar, flour & almond powder, add 3 egg whites

•Add the melted butter & pistachio spread & pour into the buttered financiers molds. Set aside to chill for 1 hour, then preheat the oven to 190 degrees for 10 min. & put the molds in the oven

•Bake for about 15 min., set aside to cool before unmolding. Toast the almonds in a hot ungreased frying pan. •Spread the lemon curd or Supreme Sweet Pistachio over each financier, sprinkle with toasted almonds.
