Rosaria Pinho, miller of the A Capela estate, located in Bouca, Mirandela Tras-os-Montes, in the north of Portugal for more than 20 years, knows all the particularities of her land. She is now passing on her passion for the job to her son Cyril. At the beginning of November, the olives are harvested when they are perfectly ripe with aroma. They are then pressed on the same day to guarantee optimal quality. All the olives on the estate are grown using sustainable agriculture methods.
