Which truffle olive oil to choose?
The oil commonly known as truffle oil is generally an olive oil (and sometimes sunflower oil) to which a truffle flavouring has been added and sometimes truffle pieces/lamellas. Not all truffle oils are the same, it is advisable to read the label and check the opaque container, the extra virgin olive oil base, the flavourings... the presence of slivers does not guarantee better quality or more pronounced flavours. At Oliviers&Co, our oils are made from extra virgin olive oil which is then flavoured.
Black or white truffle oil ?
The use and the choice of truffle oil differ according to your culinary desires. Black truffle oil has an intense taste, with notes of undergrowth, even garlic, and is suitable for meats such as veal, stews, but also vinaigrettes, eggs or beef. White truffle oil is rarer, precious and subtle in taste, it goes very well with white meats but also with fish, rabbit, carpaccios, risottos or even seafood.
